- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1 cup milk
- 1/4 cup melted butter
- 1 egg
- 1 tsp vanilla extract
- 1/4 cup brown sugar
- 1 tbsp cinnamon
- 2 tbsp melted butter (for filling)
Instructions
- Preheat your oven to 375°F (190°C). Grease a muffin tin or line with paper liners.
- In a bowl, mix flour, granulated sugar, baking powder, and salt.
- In another bowl, whisk milk, melted butter, egg, and vanilla.
- Combine wet and dry ingredients until just mixed.
- In a small bowl, mix brown sugar, cinnamon, and melted butter for the filling.
- Fill muffin cups halfway with batter, add a spoonful of filling, then top with more batter.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let cool before serving.
Notes
- Do not overmix the batter to keep muffins fluffy.
- Adjust cinnamon filling to taste.
- Store leftovers in an airtight container.
