Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup milk
  • 1/4 cup melted butter
  • 1 egg
  • 1 tsp vanilla extract
  • 1/4 cup brown sugar
  • 1 tbsp cinnamon
  • 2 tbsp melted butter (for filling)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a muffin tin or line with paper liners.
  2. In a bowl, mix flour, granulated sugar, baking powder, and salt.
  3. In another bowl, whisk milk, melted butter, egg, and vanilla.
  4. Combine wet and dry ingredients until just mixed.
  5. In a small bowl, mix brown sugar, cinnamon, and melted butter for the filling.
  6. Fill muffin cups halfway with batter, add a spoonful of filling, then top with more batter.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Let cool before serving.

Notes

  • Do not overmix the batter to keep muffins fluffy.
  • Adjust cinnamon filling to taste.
  • Store leftovers in an airtight container.
