Ingredients

  • 1/2 cup cottage cheese
  • 1/4 cup shredded cheese (cheddar or mozzarella)
  • 1/4 teaspoon salt

  • 1 tablespoon chopped fresh herbs (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a muffin tin or use silicone muffin liners.
  3. Blend eggs, cottage cheese, shredded cheese, salt, and pepper in a blender until smooth.
  4. Pour the mixture into the muffin tin, filling each cup about 3/4 full.
  5. Bake for 20-25 minutes or until set and lightly golden.
  6. Let cool for a few minutes before removing from the tin.
