Ingredients

  • 8 lasagna noodles
  • 1 cup pumpkin puree
  • 1/2 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp chopped fresh sage
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded mozzarella cheese
  • 1 cup marinara sauce

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook lasagna noodles according to package directions. Drain and lay flat.
  3. In a bowl, mix pumpkin, ricotta, Parmesan, sage, garlic powder, salt, and pepper.
  4. Spread the pumpkin mixture evenly over each noodle.
  5. Roll up each noodle tightly.
  6. Spread marinara sauce in a baking dish.
  7. Place roll-ups seam side down in the dish.
  8. Sprinkle with mozzarella cheese.
  9. Bake for 20-25 minutes until cheese melts.

Notes

  • Use fresh sage for best flavor.
  • Substitute marinara with Alfredo sauce if preferred.
  • Let cool for 5 minutes before serving.
