- 8 lasagna noodles
- 1 cup pumpkin puree
- 1/2 cup ricotta cheese
- 1/4 cup grated Parmesan cheese
- 1 tbsp chopped fresh sage
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup shredded mozzarella cheese
- 1 cup marinara sauce
Instructions
- Preheat oven to 375°F (190°C).
- Cook lasagna noodles according to package directions. Drain and lay flat.
- In a bowl, mix pumpkin, ricotta, Parmesan, sage, garlic powder, salt, and pepper.
- Spread the pumpkin mixture evenly over each noodle.
- Roll up each noodle tightly.
- Spread marinara sauce in a baking dish.
- Place roll-ups seam side down in the dish.
- Sprinkle with mozzarella cheese.
- Bake for 20-25 minutes until cheese melts.
Notes
- Use fresh sage for best flavor.
- Substitute marinara with Alfredo sauce if preferred.
- Let cool for 5 minutes before serving.
